Coring your jalapenos or removing the peppers’ insides depends on your personal preference and your tolerance to spicy food. Removing the seeds and the ribs will basically lessen the heat of the jalapeno.
You can do it either with a corer, especially if you want to leave it hollow for stuffed jalapeno recipes, or you can achieve the same results with a knife.
The majority of the heat in jalapenos is concentrated in the seeds and ribs. So if you want your dish to be spicier, then you can just leave the seeds and the ribs intact.
How can I core a jalapeno using a knife?
First, cut the stem of your jalapeno by placing it on a cutting board. Then cut it in half vertically or in a lengthwise direction. Then, by using a spoon, remove the seeds by scooping them out along with the ribs and the spicy inner membrane.
On the other hand, if you have a pepper coring tool, you simply take off the top of the jalapeno and insert the coring tool while twisting it at the same time.
After twisting down the corer into the jalapeno, remove the core by pulling it straight out of the pepper. You can also use the sharp sawtooth of your corer in removing the top part of the jalapeno.
I usually rinse them out with some water to make sure all the little bits of seeds and what not are removed before filling them or using them in my recipes!
