Caprese Chicken: Stuffed Caprese Chicken Breasts

Caprese salads are one of my favorite dishes to make for an easy appetizer, and you can take it one step further with stuffed caprese chicken breasts!

To get started with caprese stuffed chicken, you will need chicken breasts, garlic powder, fresh mozzarella cheese, a large tomato, basil, olive oil, chicken broth, and balsamic vinegar.

How do I make Caprese Chicken?

This recipe is both prepared in a skillet AND baked so it’s easy to prep and clean up. Preheat the oven to 350 degrees. While the oven heats up, it’s time to prepare the chicken.

Using a sharp knife, carefully butterfly each chicken breast. Be careful not to cut all the way through. Open each chicken breast so that the halves are flat. Season with salt and pepper and add garlic powder.

Slice the mozzarella cheese and tomatoes. Divide the mozzarella, tomato, and basil through the chicken breasts. You may need toothpicks to secure the filling in place while they are cooking.

In a large skillet, heat olive oil over medium heat. Add the stuffed chicken to the skillet and cook until brown on both sides.

Add chicken broth to the skillet and transfer to the oven. Be sure to use a skillet that is oven-safe! If not, simply transfer to an oven dish. Roast for fifteen minutes and check for doneness. If finished, prepare the balsamic glaze.

Heat vinegar in a small saucepan over medium heat. Stir frequently until the vinefar is reduced to about 1/3 of its original volume and is thick. Remove from heat and get ready to finalize the main course!

Place a stuffed chicken breast on each plate and top with the balsamic glaze. Drizzle as desired. Enjoy!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz. fresh Mozzarella cheese, sliced thin
